Two Ingredient Pancakes

Ingredients:

1 banana (mashed)

2 eggs

1 tsp cinnamon (optional)


Instructions:

  1. Whisk eggs in a bowl until scrambled. Add mashed ripe banana to the eggs and combine. Add cinnamon if desired.

  2. On medium high heat, pour 1/4 cup of the batter onto a greased skillet. Keep in mind, these cook fast! Flip after one minute.

  3. Serve with your favorite toppings. Some of mine include: Maple syrup, powdered sugar, berries, jam, cinnamon, peanut butter.


Notes:

  1. The riper your banana, the sweeter the pancakes will be

  2. The more you whisk the eggs, the more air is let in. Therefore, the more you whisk the eggs, the fluffier the pancakes will be
