Protein Packed Pumpkin Pancakes

Ingredients
1 cup oats
2 eggs
5 oz Greek yogurt
1/2 cup pumpkin puree
1 tsp vanilla extract
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
Sprinkle of salt
Instructions
In a blender, combine all the ingredients: oats, eggs, Greek yogurt, pumpkin puree, vanilla extract, baking powder, cinnamon, nutmeg, ground ginger, and a sprinkle of salt.
Blend until the mixture is smooth and well combined.
Preheat a non-stick skillet or griddle over medium heat.
Pour a portion of the batter onto the skillet, cooking for about 2 minutes or until bubbles form on the surface.
Flip the pancake and cook for an additional 1-2 minutes until golden brown.
Repeat with the remaining batter.
Serving Suggestions
Top the pancakes with whipped cinnamon butter and maple syrup for a delicious finish!
