Protein Packed Pumpkin Pancakes

Ingredients

  • 1 cup oats

  • 2 eggs

  • 5 oz Greek yogurt

  • 1/2 cup pumpkin puree

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp ground ginger

  • Sprinkle of salt


Instructions

  1. In a blender, combine all the ingredients: oats, eggs, Greek yogurt, pumpkin puree, vanilla extract, baking powder, cinnamon, nutmeg, ground ginger, and a sprinkle of salt.

  2. Blend until the mixture is smooth and well combined.

  3. Preheat a non-stick skillet or griddle over medium heat.

  4. Pour a portion of the batter onto the skillet, cooking for about 2 minutes or until bubbles form on the surface.

  5. Flip the pancake and cook for an additional 1-2 minutes until golden brown.

  6. Repeat with the remaining batter.



Serving Suggestions

Top the pancakes with whipped cinnamon butter and maple syrup for a delicious finish!
