Lemon Basil Shrimp Bowl with Quinoa

Ingredients:

1 bell pepper, cubed

1 cup cherry tomatoes

8 oz raw shrimp

1 cup uncooked quinoa (or rice or couscous)

4 tbsp olive oil

Juice of 1 lemon

2 tsp salt

2 tsp pepper

1 tsp paprika

1 tsp chili powder (optional)

Handful basil

Handful parsley


Instructions:

Add olive oil, lemon juice, seasonings and herbs to the veggies and shimp placed in separate bowls. Pan sear shrimp for 1-2 mins each side and remove from heat. Add veggies and cook for 5 mins, remove from heat. Add uncooked quinoa directly to pan and fill with twice as much water (2 cups water for 1 cup quinoa). Scrape pan to get all the seasonings into the water.


Assemble grain, veggies and shrimp in a bowl and top with more lemon & herbs 🫶🏼🌸🕺🏽
