Crostini Two Ways

Ingredients:

1 fresh baguette

1/2 lb brie cheese

Olive oil spray (or 1 tbsp olive oil)


Sweet

1/4 cup fig jam


Savory

1 cup villagio marzano tomatoes (or cherry tomatoes)

1 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp salt

1 tsp black pepper


Instructions:

  1. Preheat the oven to 425 degrees Fahrenheit

  2. Slice the baguette on a diagonal to create pieces about 1/2 inch thick. Arrange them on a single layer on a baking sheet. Cut the brie cheese into 1 oz pieces (about the size of your thumb).

  3. Place one piece of cheese on each piece of bread. Bake in the oven for 12 minutes.

  4. While baking, prep the tomato topping. Chop tomatoes into small pieces (about the size of a dime).

  5. In a small bowl, combine tomatoes, olive oil, balsamic vinegar, salt, and pepper.

  6. When the crostini is finished baking, add one teaspoon of fig jam to half the crostini and top with a small rosemary sprig. Add the tomato topping to the other half of the crostini.
