Cod & Sweet Tomatoes

Ingredients
1/2 onion (diced)
1 clove of garlic (minced)
2 tbsp olive oil
1/4 cup white wine (or veggie stock/water)
2 cups small sweet tomatoes (like flavor bombs)
1 tsp salt
1 tsp pepper
12 oz cod (3 four oz pieces)
1 tbsp capers
Fresh basil (for topping)
Optional: rice or pasta with fresh basil and parmesan cheese (for serving)
Instructions
Add the diced onion and minced garlic to a pan with olive oil over medium-high heat. Cook until slightly brown, about 5 minutes.
Deglaze the pan with white wine (or veggie stock/water).
Add the small sweet tomatoes to the pan along with salt and pepper.
Cook on medium heat for 7-8 minutes until the skin on the tomatoes starts to curl. Carefully smash the softened tomatoes with a fork.
Dry the cod pieces and season with salt and pepper. Add them to the pan with capers. Cover and cook for 8 minutes.
Top with fresh basil before serving.
Serving Suggestions
Serve with rice or pasta topped with fresh basil and parmesan cheese.
