Asparagus Salad

Makes 4-6 servings


Ingredients:

1 bunch of asparagus, cut into 1 inch pieces

2 cups arugula

3 oz Goat cheese

1/2 c Chopped almonds

 

Creamy avocado dressing:

1/2 c olive oil

1/4 c vinegar

Salt and pepper

2 tbsp Garlic powder

1 tbsp honey

1/2 avocado

Juice from half a lemon

 

 Instructions:

1.    In a large pot, blanch the asparagus in boiling water for 3-4 mins then transfer to an ice bath to stop from cooking (and to preserve color). Asparagus can be made the day before.

2.    Transfer the cooled asparagus to a bowl and add the arugula, cheese and almonds.

3. In a blender, combine all ingredients for the avocado dressing and blend until combined.

3.    Gently toss the salad with the creamy avocado dressing.

 

Top with lemon zest. Soft boiled egg optional.
